Vegetable omelettes are a delicious way to increase your veggie intake. Classic omelettes are made by frying beaten eggs, however, any vegetable can be added to omelettes. The most common additions being garlic, onions, spinach, and tomatoes.
Make Vegetable Noodles or Cauliflower Rice
These are easy to make, and a great way to get more veggies in your diet as they act as a low-carb substitute for pasta. If you have a spiralizer at home – courgettes, carrots and sweet potatoes are good substitute choices!

The good thing about lettuce wraps is that they can be part of several types of dishes. They are often used to make low-carb sandwiches and bunless burgers and is an easy way to eat more vegetables and reduce your carb intake, whilst consuming lots of healthy nutrients. In addition, many types of veggies such as portobello mushroom tops, sliced sweet potatoes and sliced aubergines make excellent buns.
